Patra is a delightful vegan dish made from colocasia leaves, rolled with a spiced gram flour paste, and then steamed to perfection. Once sliced and grilled, it offers a smoky flavor with a tender yet chewy texture that's perfect for barbecue lovers.

- Colocasia leaves - 4 large leaves
- Besan (gram flour) - 100 grams
- Tamarind pulp - 1 tablespoon
- Jaggery (grated) - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Water - 125 ml
- Mustard seeds - 1/2 teaspoon
- Oil - 1 tablespoon
- Fresh coriander leaves (chopped) - 2 tablespoons
Steps
- Wash the colocasia leaves thoroughly and remove the thick veins from the center to make them pliable.
- In a mixing bowl, combine besan, tamarind pulp, jaggery, turmeric powder, red chili powder, coriander powder, cumin powder, salt, and water to form a smooth paste.
- Spread a thin layer of the gram flour mixture evenly on the underside of each colocasia leaf.
- Carefully roll the leaf tightly from one side to the other like a Swiss roll, sealing the edges with the gram flour paste.
- Repeat the process for all leaves and place the rolls in a steamer, steaming for about 20 minutes until cooked through.
- Once done, let the rolls cool for a few minutes before slicing them into 1-2 cm thick pieces.
- In a pan, heat oil and add mustard seeds. Once they crackle, add the sliced patra pieces and grill them for 5-7 minutes until they are crispy on the outside.
- Garnish with chopped fresh coriander leaves and serve hot.
