Ingredients

  • Colocasia leaves - 4 large leaves
  • Besan (gram flour) - 100 grams
  • Tamarind pulp - 1 tablespoon
  • Jaggery (grated) - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Water - 125 ml
  • Mustard seeds - 1/2 teaspoon
  • Oil - 1 tablespoon
  • Fresh coriander leaves (chopped) - 2 tablespoons

Steps

  1. Wash the colocasia leaves thoroughly and remove the thick veins from the center to make them pliable.
  2. In a mixing bowl, combine besan, tamarind pulp, jaggery, turmeric powder, red chili powder, coriander powder, cumin powder, salt, and water to form a smooth paste.
  3. Spread a thin layer of the gram flour mixture evenly on the underside of each colocasia leaf.
  4. Carefully roll the leaf tightly from one side to the other like a Swiss roll, sealing the edges with the gram flour paste.
  5. Repeat the process for all leaves and place the rolls in a steamer, steaming for about 20 minutes until cooked through.
  6. Once done, let the rolls cool for a few minutes before slicing them into 1-2 cm thick pieces.
  7. In a pan, heat oil and add mustard seeds. Once they crackle, add the sliced patra pieces and grill them for 5-7 minutes until they are crispy on the outside.
  8. Garnish with chopped fresh coriander leaves and serve hot.
