Ingredients

  • Pasta (penne or fusilli) - 200 grams
  • Chicken breast (boneless, diced) - 200 grams
  • Greek yogurt - 100 grams
  • Tikka masala spice mix - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Onion (finely chopped) - 1 medium
  • Tomato puree - 100 grams
  • Coconut milk - 100 ml
  • Fresh cilantro (chopped) - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, mix the diced chicken with Greek yogurt, tikka masala spice mix, garlic, ginger, salt, and black pepper. Marinate for at least 15 minutes.
  2. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent and soft, about 5 minutes.
  4. Add the marinated chicken to the skillet and cook until browned and cooked through, about 7-8 minutes.
  5. Stir in the tomato puree and coconut milk. Bring the mixture to a simmer and cook for another 5 minutes until thickened.
  6. Add the cooked pasta to the skillet and toss until the pasta is well coated with the tikka sauce.
  7. Serve hot, garnished with chopped fresh cilantro.
