- Pasta (penne or fusilli) - 200 grams
- Chicken breast (boneless, diced) - 200 grams
- Greek yogurt - 100 grams
- Tikka masala spice mix - 2 tablespoons
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Onion (finely chopped) - 1 medium
- Tomato puree - 100 grams
- Coconut milk - 100 ml
- Fresh cilantro (chopped) - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, mix the diced chicken with Greek yogurt, tikka masala spice mix, garlic, ginger, salt, and black pepper. Marinate for at least 15 minutes.
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent and soft, about 5 minutes.
- Add the marinated chicken to the skillet and cook until browned and cooked through, about 7-8 minutes.
- Stir in the tomato puree and coconut milk. Bring the mixture to a simmer and cook for another 5 minutes until thickened.
- Add the cooked pasta to the skillet and toss until the pasta is well coated with the tikka sauce.
- Serve hot, garnished with chopped fresh cilantro.
