Ingredients

  • Pasta (penne or fusilli) - 200 grams
  • Fresh spinach - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, finely chopped (optional)
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Fresh cream - 100 ml
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Grated Parmesan cheese - 30 grams (optional)
  • Fresh coriander leaves - for garnish

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add cumin seeds and sauté until they start to crackle.
  3. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic, grated ginger, and green chili (if using) and cook for another 1-2 minutes.
  4. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Stir in turmeric powder and red chili powder, then mix well.
  5. Lower the heat, add the fresh cream, and stir until the mixture is smooth. Season with salt and black pepper to taste.
  6. Add the cooked pasta to the skillet and toss to combine everything well. Cook for an additional 2-3 minutes until heated through.
  7. Serve hot, garnished with grated Parmesan cheese (if using) and fresh coriander leaves.
