- Whole wheat pasta - 150 grams
- Paneer (cubed) - 100 grams
- Olive oil - 1 tablespoon
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Tomato (diced) - 1 medium
- Spinach (fresh, chopped) - 1 cup
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander (chopped) - for garnish
Steps
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large pan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced tomato and cook until softened, about 3-4 minutes.
- Add cumin powder, turmeric powder, red chili powder, salt, and black pepper. Mix well and cook for an additional 2 minutes.
- Add the cubed paneer and chopped spinach to the pan. Cook until the spinach is wilted and the paneer is heated through, about 3-4 minutes.
- Gently fold in the cooked pasta and toss until well combined. Adjust seasoning if necessary.
- Serve hot, garnished with fresh coriander.
