  • Whole wheat pasta - 150 grams
  • Paneer (cubed) - 100 grams
  • Olive oil - 1 tablespoon
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Tomato (diced) - 1 medium
  • Spinach (fresh, chopped) - 1 cup
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander (chopped) - for garnish

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the diced tomato and cook until softened, about 3-4 minutes.
  5. Add cumin powder, turmeric powder, red chili powder, salt, and black pepper. Mix well and cook for an additional 2 minutes.
  6. Add the cubed paneer and chopped spinach to the pan. Cook until the spinach is wilted and the paneer is heated through, about 3-4 minutes.
  7. Gently fold in the cooked pasta and toss until well combined. Adjust seasoning if necessary.
  8. Serve hot, garnished with fresh coriander.
