Steps
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large pan, heat the olive oil over medium heat and add the mustard seeds. Once they start to splutter, add the cumin seeds.
- Add the minced garlic, grated ginger, and chopped green chili to the pan, sautéing until fragrant.
- Stir in the chopped spinach and cook until it wilts, about 2-3 minutes.
- Pour in the coconut milk and add the fresh grated coconut. Stir well and let it simmer for 5 minutes to blend the flavors.
- Season the sauce with salt, black pepper, and lemon juice. Mix well.
- Add the cooked pasta to the pan and toss everything together until the pasta is well coated with the coconut sauce.
