  • Pasta (whole wheat or regular) - 150 grams
  • Canned chickpeas (chole) - 240 grams, drained and rinsed
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit (optional)
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add cumin seeds and sauté until they start to sizzle.
  3. Add the chopped onion and sauté until it turns golden brown, about 5-7 minutes.
  4. Stir in the minced garlic, grated ginger, and green chili. Cook for another 1-2 minutes until fragrant.
  5. Add the chopped tomato, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften, about 5 minutes.
  6. Stir in the drained chickpeas and mix well. Add a splash of water if the mixture is too thick.
  7. Let the chickpeas cook for about 5-7 minutes, allowing the flavors to meld. Add garam masala and stir well.
  8. Combine the cooked pasta with the chickpea mixture, tossing to coat the pasta evenly.
  9. Season with black pepper to taste, and garnish with fresh cilantro before serving.
