- Ginger - 1 teaspoon, grated
- Green chili - 1, slit (optional)
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Fresh cilantro - for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add cumin seeds and sauté until they start to sizzle.
- Add the chopped onion and sauté until it turns golden brown, about 5-7 minutes.
- Stir in the minced garlic, grated ginger, and green chili. Cook for another 1-2 minutes until fragrant.
- Add the chopped tomato, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften, about 5 minutes.
- Stir in the drained chickpeas and mix well. Add a splash of water if the mixture is too thick.
- Let the chickpeas cook for about 5-7 minutes, allowing the flavors to meld. Add garam masala and stir well.
- Combine the cooked pasta with the chickpea mixture, tossing to coat the pasta evenly.
- Season with black pepper to taste, and garnish with fresh cilantro before serving.
