- Whole wheat pasta - 150 grams
- Cauliflower florets - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, chopped
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Water - 2 liters for boiling pasta
Steps
- Bring 2 liters of water to a boil in a large pot. Add a pinch of salt and the whole wheat pasta. Cook according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the finely chopped onion and sauté until it becomes translucent. Stir in the minced garlic, grated ginger, and chopped green chili. Cook for another 2-3 minutes.
- Add the cauliflower florets to the skillet and stir well. Sprinkle turmeric powder, garam masala, salt, and black pepper. Stir to coat the cauliflower evenly with the spices.
- Cover the skillet and let the cauliflower cook for about 5-7 minutes until tender, stirring occasionally.
- Once the cauliflower is cooked, add the drained pasta to the skillet. Toss everything together gently to combine.
- Remove from heat, add fresh cilantro and lemon juice, and mix well. Serve hot.
