Ingredients

  • Whole wheat pasta - 150 grams
  • Cauliflower florets - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, chopped
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Water - 2 liters for boiling pasta

Steps

  1. Bring 2 liters of water to a boil in a large pot. Add a pinch of salt and the whole wheat pasta. Cook according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the finely chopped onion and sauté until it becomes translucent. Stir in the minced garlic, grated ginger, and chopped green chili. Cook for another 2-3 minutes.
  4. Add the cauliflower florets to the skillet and stir well. Sprinkle turmeric powder, garam masala, salt, and black pepper. Stir to coat the cauliflower evenly with the spices.
  5. Cover the skillet and let the cauliflower cook for about 5-7 minutes until tender, stirring occasionally.
  6. Once the cauliflower is cooked, add the drained pasta to the skillet. Toss everything together gently to combine.
  7. Remove from heat, add fresh cilantro and lemon juice, and mix well. Serve hot.
