Ingredients

  • Whole wheat pasta - 150 grams
  • Bhindi (okra) - 200 grams, chopped
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, chopped
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the finely chopped onion and sauté until translucent and lightly golden.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften and the mixture becomes a thick sauce.
  6. Add the chopped bhindi (okra) to the pan and stir well. Cook for about 8-10 minutes, stirring occasionally, until the bhindi is tender and slightly crispy.
  7. Sprinkle in the garam masala, black pepper, and mix well. Cook for another 2 minutes.
  8. Add the cooked pasta to the pan and gently toss everything together until the pasta is well coated with the bhindi mixture.
  9. Remove from heat, stir in the fresh cilantro and lemon juice, and adjust seasoning if needed.
  10. Serve hot, garnished with extra cilantro if desired.
