- Bhindi (okra) - 200 grams, chopped

- Tomato - 1 medium, chopped
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large pan, heat olive oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the finely chopped onion and sauté until translucent and lightly golden.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften and the mixture becomes a thick sauce.
- Add the chopped bhindi (okra) to the pan and stir well. Cook for about 8-10 minutes, stirring occasionally, until the bhindi is tender and slightly crispy.
- Sprinkle in the garam masala, black pepper, and mix well. Cook for another 2 minutes.
- Add the cooked pasta to the pan and gently toss everything together until the pasta is well coated with the bhindi mixture.
- Remove from heat, stir in the fresh cilantro and lemon juice, and adjust seasoning if needed.
- Serve hot, garnished with extra cilantro if desired.
