  • Ginger (grated) - 1 teaspoon
  • Garlic (minced) - 2 cloves
  • Green chili (slit) - 1
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil (vegetable or olive) - 2 tablespoons
  • Cilantro (fresh, chopped) - for garnish
  • Water - 2 cups

Steps

  1. Begin by cooking the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside once al dente.
  2. In a separate pan, heat the oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the grated ginger, minced garlic, and slit green chili to the pan. Sauté for another minute until fragrant.
  4. Stir in the diced potato and cauliflower florets, cooking for about 5 minutes while stirring occasionally.
  5. Add the chopped tomato, turmeric, cumin, coriander powder, and salt. Mix well and cook for another 5 minutes until the vegetables are slightly tender.

  7. Once the vegetables are tender, add the cooked pasta and garam masala to the pan. Toss everything together gently to combine and heat through for another 2-3 minutes.
