- Tomato - 1 medium, chopped
- Garlic - 2 cloves, minced

- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Salt - to taste
- Water - 1 liter
Steps
- Boil 1 liter of water in a large pot and add a pinch of salt. Once boiling, add the whole wheat pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Drain and set aside.
- In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add cumin seeds and allow them to splutter.
- Add the finely chopped onion and sauté until golden brown. Then add minced garlic, grated ginger, and slit green chili, cooking for an additional 2 minutes.
- Stir in the diced potatoes, turmeric powder, coriander powder, and salt. Cover and cook for about 10 minutes, stirring occasionally until the potatoes are tender.
- Add the chopped tomato and garam masala, mixing well. Cook for another 5 minutes until the tomatoes break down and create a sauce.
- Combine the cooked pasta with the potato mixture, tossing gently to coat evenly. Cook together for 2-3 minutes to allow flavors to meld.
- Remove from heat, garnish with fresh cilantro, and serve hot.
