Ingredients

  • Whole wheat pasta - 200 grams
  • Potatoes - 200 grams, peeled and diced
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Water - 1 liter

Steps

  1. Boil 1 liter of water in a large pot and add a pinch of salt. Once boiling, add the whole wheat pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Drain and set aside.
  2. In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add cumin seeds and allow them to splutter.
  3. Add the finely chopped onion and sauté until golden brown. Then add minced garlic, grated ginger, and slit green chili, cooking for an additional 2 minutes.
  4. Stir in the diced potatoes, turmeric powder, coriander powder, and salt. Cover and cook for about 10 minutes, stirring occasionally until the potatoes are tender.
  5. Add the chopped tomato and garam masala, mixing well. Cook for another 5 minutes until the tomatoes break down and create a sauce.
  6. Combine the cooked pasta with the potato mixture, tossing gently to coat evenly. Cook together for 2-3 minutes to allow flavors to meld.
  7. Remove from heat, garnish with fresh cilantro, and serve hot.
