- Fresh coriander leaves, chopped - for garnish
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil, add the pasta, and cook according to package instructions until al dente. Drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the cumin and mustard seeds, allowing them to splutter for about 30 seconds.
- Add the chopped onion and sauté until it turns translucent, about 2-3 minutes. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the diced bell pepper, carrot, and green beans to the pan, and sauté for 5-7 minutes until the vegetables are slightly tender.
- Stir in the chopped tomato, turmeric powder, red chili powder, and salt. Cook for another 3-4 minutes until the tomatoes soften.
- Add the cooked pasta to the vegetable mixture and toss well to combine. Adjust salt and spices according to taste.
- Remove from heat, drizzle with lemon juice, and garnish with fresh coriander leaves. Serve hot.
