  • Mustard seeds - 1 teaspoon
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Bell pepper, diced - 1 medium
  • Carrot, diced - 1 medium
  • Green beans, chopped - 100 grams
  • Tomato, chopped - 1 medium
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves, chopped - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil, add the pasta, and cook according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the cumin and mustard seeds, allowing them to splutter for about 30 seconds.
  3. Add the chopped onion and sauté until it turns translucent, about 2-3 minutes. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add the diced bell pepper, carrot, and green beans to the pan, and sauté for 5-7 minutes until the vegetables are slightly tender.
  5. Stir in the chopped tomato, turmeric powder, red chili powder, and salt. Cook for another 3-4 minutes until the tomatoes soften.
  6. Add the cooked pasta to the vegetable mixture and toss well to combine. Adjust salt and spices according to taste.
  7. Remove from heat, drizzle with lemon juice, and garnish with fresh coriander leaves. Serve hot.
