- Pasta (fusilli or penne) - 200 grams
- Potatoes - 2 medium (about 300 grams)
- Onion - 1 medium, finely chopped
- Green chilies - 2, finely chopped
- Ginger-garlic paste - 1 teaspoon
- Mustard seeds - 1/2 teaspoon
- Curry leaves - 8-10 leaves
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Bread crumbs - 1/2 cup
- Fresh coriander - 2 tablespoons, chopped
- Oil - 2 tablespoons for frying and 1 tablespoon for cooking
- Salt - to taste
- Lemon juice - 1 tablespoon
Steps
- Boil the potatoes in salted water until tender, about 15 minutes. Drain, peel, and mash them.
- In a pan, heat 1 tablespoon of oil over medium heat. Add mustard seeds and let them crackle.
- Add chopped onions, green chilies, and curry leaves. Sauté until the onions are translucent.
- Stir in ginger-garlic paste, turmeric powder, red chili powder, and garam masala. Cook for 1-2 minutes.
- Add the mashed potatoes to the pan and mix well. Season with salt to taste and cook for another 2-3 minutes. Remove from heat and let it cool.
- Once cooled, form the potato mixture into small patties.
- In a separate pot, boil water and cook the pasta according to package instructions until al dente. Drain and set aside.
- Coat each potato patty in bread crumbs and shallow fry in the remaining oil until golden brown on both sides. Remove and place on paper towels to absorb excess oil.
- In a large mixing bowl, combine the cooked pasta, fried patties (broken into pieces), fresh coriander, and lemon juice. Toss gently to combine.
- Serve warm, garnished with extra coriander and a side of chutney if desired.
