Ingredients

  • Pasta (fusilli or penne) - 200 grams
  • Potatoes - 2 medium (about 300 grams)
  • Onion - 1 medium, finely chopped
  • Green chilies - 2, finely chopped
  • Ginger-garlic paste - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Curry leaves - 8-10 leaves
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Bread crumbs - 1/2 cup
  • Fresh coriander - 2 tablespoons, chopped
  • Oil - 2 tablespoons for frying and 1 tablespoon for cooking
  • Salt - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Boil the potatoes in salted water until tender, about 15 minutes. Drain, peel, and mash them.
  2. In a pan, heat 1 tablespoon of oil over medium heat. Add mustard seeds and let them crackle.
  3. Add chopped onions, green chilies, and curry leaves. Sauté until the onions are translucent.
  4. Stir in ginger-garlic paste, turmeric powder, red chili powder, and garam masala. Cook for 1-2 minutes.
  5. Add the mashed potatoes to the pan and mix well. Season with salt to taste and cook for another 2-3 minutes. Remove from heat and let it cool.
  6. Once cooled, form the potato mixture into small patties.
  7. In a separate pot, boil water and cook the pasta according to package instructions until al dente. Drain and set aside.
  8. Coat each potato patty in bread crumbs and shallow fry in the remaining oil until golden brown on both sides. Remove and place on paper towels to absorb excess oil.
  9. In a large mixing bowl, combine the cooked pasta, fried patties (broken into pieces), fresh coriander, and lemon juice. Toss gently to combine.
  10. Serve warm, garnished with extra coriander and a side of chutney if desired.
