- Whole wheat pasta - 200 grams
- Potato - 1 medium (about 150 grams), boiled and mashed
- Green peas - 100 grams, boiled
- Onion - 1 small, finely chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Green chili - 1, finely chopped
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Olive oil - 2 tablespoons
- Water - 1 cup for pasta
Steps
- Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large mixing bowl, combine the boiled and mashed potato, boiled green peas, chopped onion, grated ginger, minced garlic, chopped green chili, cumin seeds, coriander powder, turmeric powder, garam masala, and fresh cilantro. Mix well until all ingredients are combined.
- Form the potato mixture into small patties (about 8-10) and flatten them slightly.
- Heat olive oil in a non-stick pan over medium heat. Add the patties to the pan and cook for about 4-5 minutes on each side until golden brown and crispy.
- In a large mixing bowl, toss the cooked pasta with lemon juice, salt, black pepper, and the cooked vada patties. Mix gently to combine.
- Serve hot, garnished with additional cilantro if desired.
