- Pasta - 100 grams
- Vegetable oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Chana dal (split chickpeas) - 1 tablespoon
- Urad dal (split black gram) - 1 tablespoon
- Onion (finely chopped) - 1 small
- Green chili (slit) - 1
- Ginger (grated) - 1 teaspoon
- Mixed vegetables (carrot, peas, bell pepper - chopped) - 1 cup
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Coriander leaves (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 1 cup
Steps
- Boil water in a pot, add a pinch of salt, and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a pan, heat vegetable oil over medium heat. Add mustard seeds and let them splutter, then add cumin seeds, chana dal, and urad dal, sautéing until golden brown.
- Add chopped onions and green chili, sauté until onions are translucent. Stir in grated ginger and sauté for another minute.
- Add mixed vegetables, turmeric powder, and salt. Cook for about 5-7 minutes until the vegetables are tender.
- Add the cooked pasta to the vegetable mixture, stirring well to combine. Cook for an additional 2-3 minutes, allowing the flavors to meld.
- Remove from heat and stir in chopped coriander leaves and lemon juice. Serve hot.
