Ingredients

  • Pasta - 100 grams
  • Vegetable oil - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Chana dal (split chickpeas) - 1 tablespoon
  • Urad dal (split black gram) - 1 tablespoon
  • Onion (finely chopped) - 1 small
  • Green chili (slit) - 1
  • Ginger (grated) - 1 teaspoon
  • Mixed vegetables (carrot, peas, bell pepper - chopped) - 1 cup
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Coriander leaves (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 1 cup

Steps

  1. Boil water in a pot, add a pinch of salt, and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a pan, heat vegetable oil over medium heat. Add mustard seeds and let them splutter, then add cumin seeds, chana dal, and urad dal, sautéing until golden brown.
  3. Add chopped onions and green chili, sauté until onions are translucent. Stir in grated ginger and sauté for another minute.
  4. Add mixed vegetables, turmeric powder, and salt. Cook for about 5-7 minutes until the vegetables are tender.
  5. Add the cooked pasta to the vegetable mixture, stirring well to combine. Cook for an additional 2-3 minutes, allowing the flavors to meld.
  6. Remove from heat and stir in chopped coriander leaves and lemon juice. Serve hot.
