Ingredients

  • Pasta (penne or fusilli) - 200 grams
  • Coconut oil - 1 tablespoon

  • Ginger (grated) - 1 inch piece
  • Bell pepper (diced) - 1 medium
  • Tomatoes (pureed) - 200 grams
  • Coconut milk - 150 ml
  • Tikka masala powder - 2 tablespoons
  • Salt - to taste
  • Fresh cilantro (chopped) - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and grated ginger to the pan, cooking for another minute until fragrant.
  4. Stir in the diced bell pepper and cook for 3-4 minutes until slightly softened.
  5. Pour in the pureed tomatoes and cook for 5-7 minutes, allowing the mixture to thicken.
  6. Add the coconut milk and tikka masala powder, stirring well to combine. Season with salt to taste and simmer for 5 minutes.
  7. Add the cooked pasta to the sauce, tossing gently to coat the pasta evenly with the tikka sauce.
  8. Remove from heat, drizzle with lemon juice, and garnish with fresh cilantro before serving.
