Ingredients

  • Pasta (fusilli or penne) - 120 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Bell pepper (any color) - 1 medium, diced
  • Corn (canned or boiled) - 100 grams
  • Fresh coriander (cilantro) - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Chaat masala - 1 teaspoon
  • Cumin powder - 1/2 teaspoon

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, chopped red onion, diced bell pepper, and corn.
  3. Add the cooked pasta to the bowl with the vegetables.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, black pepper, chaat masala, and cumin powder.
  5. Pour the dressing over the pasta and vegetables, and toss gently to combine.
