- Coconut milk - 200 ml
- Olive oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon

Steps
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions and sauté until translucent. Then, add the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Stir in the pureed tomato and cook for 5 minutes, allowing the mixture to thicken.
- Add turmeric powder, garam masala, salt, and black pepper. Mix well and cook for another 2 minutes.
- Add the fresh spinach and cook until wilted, about 3-4 minutes.
- Pour in the coconut milk and bring to a gentle simmer. Cook for an additional 5 minutes, stirring occasionally.
- Incorporate the cooked pasta into the spinach sauce, mixing well to coat the pasta evenly.
- Add lemon juice, adjust seasoning if needed, and cook for another minute.
- Serve hot, garnished with fresh coriander.
