  • Coconut milk - 200 ml
  • Olive oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh coriander - for garnish

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the chopped onions and sauté until translucent. Then, add the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  4. Stir in the pureed tomato and cook for 5 minutes, allowing the mixture to thicken.
  5. Add turmeric powder, garam masala, salt, and black pepper. Mix well and cook for another 2 minutes.
  6. Add the fresh spinach and cook until wilted, about 3-4 minutes.
  7. Pour in the coconut milk and bring to a gentle simmer. Cook for an additional 5 minutes, stirring occasionally.
  8. Incorporate the cooked pasta into the spinach sauce, mixing well to coat the pasta evenly.
  9. Add lemon juice, adjust seasoning if needed, and cook for another minute.
  10. Serve hot, garnished with fresh coriander.
