- Pasta (any shape) - 150 grams
- Tomatoes - 2 medium, chopped
- Tamarind paste - 1 tablespoon
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Coriander leaves - 2 tablespoons, chopped
- Salt - to taste
- Water - 4 cups
- Oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Lemon juice - 1 tablespoon
Steps
- Boil 4 cups of water in a pot and add the pasta. Cook according to package instructions until al dente, then drain and set aside.
- In a large pan, heat the oil over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
- Add minced garlic and grated ginger to the pan, sautéing until fragrant.
- Stir in the chopped tomatoes, turmeric powder, red chili powder, and black pepper. Cook until the tomatoes soften and break down.
- Add the tamarind paste, salt, and about 2 cups of water to the pan. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Mix in the cooked pasta, adding more water if necessary to achieve desired consistency. Cook for an additional 5 minutes to allow the flavors to meld.
- Remove from heat and stir in lemon juice and chopped coriander leaves before serving.
