Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Tomatoes - 400 grams, diced (canned or fresh)
  • Black olives - 50 grams, pitted and sliced
  • Capers - 2 tablespoons, rinsed
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Salt - to taste
  • Fresh coriander leaves - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion is translucent.
  3. Add the green chili and cook for another minute to release its flavors.
  4. Stir in the diced tomatoes, black olives, and capers. Cook for about 5-7 minutes until the tomatoes soften and the mixture is well combined.
  5. Add cumin, coriander, turmeric, red chili powder, and salt to the tomato mixture. Stir and let it simmer for another 5 minutes to allow the spices to blend.
  6. Add the cooked pasta to the skillet and toss well to coat the pasta with the sauce.
  7. Finish with a squeeze of lemon juice and garnish with fresh coriander leaves before serving.
