- Garlic - 4 cloves, minced

- Green chili - 1, finely chopped
- Tomatoes - 400 grams, diced (canned or fresh)
- Black olives - 50 grams, pitted and sliced
- Capers - 2 tablespoons, rinsed
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon (adjust to taste)
- Salt - to taste
- Fresh coriander leaves - for garnish
- Lemon juice - 1 tablespoon
Steps
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion is translucent.
- Add the green chili and cook for another minute to release its flavors.
- Stir in the diced tomatoes, black olives, and capers. Cook for about 5-7 minutes until the tomatoes soften and the mixture is well combined.
- Add cumin, coriander, turmeric, red chili powder, and salt to the tomato mixture. Stir and let it simmer for another 5 minutes to allow the spices to blend.
- Add the cooked pasta to the skillet and toss well to coat the pasta with the sauce.
- Finish with a squeeze of lemon juice and garnish with fresh coriander leaves before serving.
