Ingredients

  • Pasta (penne or fusilli) - 200 grams
  • Paneer (cubed) - 150 grams
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Bell pepper (diced) - 1 medium
  • Tomato (chopped) - 1 medium
  • Green peas (fresh or frozen) - 100 grams
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander (chopped) - 2 tablespoons
  • Water - 500 milliliters

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add minced garlic and grated ginger to the skillet, cooking for an additional 1-2 minutes until fragrant.
  4. Stir in the diced bell pepper and chopped tomato, cooking for another 5 minutes until the vegetables soften.
  5. Add the green peas, red chili powder, garam masala, salt, and black pepper. Cook for 2-3 minutes, allowing the spices to combine with the vegetables.
  6. Add the cubed paneer to the skillet, gently folding it in and cooking until heated through, about 3-4 minutes.
  7. Add the cooked pasta to the skillet, tossing everything together to ensure the pasta is well coated with the sauce and vegetables. Cook for an additional 2 minutes.
  8. Garnish with fresh coriander before serving.
