- Pasta (penne or fusilli) - 200 grams
- Paneer (cubed) - 150 grams
- Olive oil - 2 tablespoons
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Bell pepper (diced) - 1 medium
- Tomato (chopped) - 1 medium
- Green peas (fresh or frozen) - 100 grams
- Red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander (chopped) - 2 tablespoons
- Water - 500 milliliters
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic and grated ginger to the skillet, cooking for an additional 1-2 minutes until fragrant.
- Stir in the diced bell pepper and chopped tomato, cooking for another 5 minutes until the vegetables soften.
- Add the green peas, red chili powder, garam masala, salt, and black pepper. Cook for 2-3 minutes, allowing the spices to combine with the vegetables.
- Add the cubed paneer to the skillet, gently folding it in and cooking until heated through, about 3-4 minutes.
- Add the cooked pasta to the skillet, tossing everything together to ensure the pasta is well coated with the sauce and vegetables. Cook for an additional 2 minutes.
- Garnish with fresh coriander before serving.
