Ingredients

  • Pasta (fusilli or penne) - 200 grams
  • Cashews - 50 grams
  • Coconut milk - 200 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Tomato puree - 100 grams
  • Green peas - 100 grams (fresh or frozen)
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - ½ teaspoon
  • Red chili powder - ½ teaspoon (adjust to taste)
  • Vegetable broth - 200 ml
  • Salt - to taste
  • Oil (coconut or vegetable) - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a blender, combine cashews and coconut milk. Blend until smooth and creamy, then set aside.
  3. In a large pan, heat oil over medium heat. Add cumin seeds and let them crackle for a few seconds.
  4. Add chopped onions, garlic, and ginger to the pan. Sauté until the onions are translucent.
  5. Stir in the tomato puree, coriander powder, garam masala, turmeric powder, and red chili powder. Cook for about 5 minutes until the mixture thickens.
  6. Add the vegetable broth and bring to a simmer. Once simmering, stir in the cashew-coconut mixture and mix well.
  7. Add green peas and let the sauce simmer for another 5-7 minutes until the peas are cooked through.
  8. Add the cooked pasta to the sauce and toss well to coat. Cook for an additional 2-3 minutes to heat through.
  9. Season with salt to taste, and garnish with fresh cilantro before serving.
