- Pasta (fusilli or penne) - 200 grams
- Cashews - 50 grams
- Coconut milk - 200 ml
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Tomato puree - 100 grams
- Green peas - 100 grams (fresh or frozen)
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - ½ teaspoon
- Red chili powder - ½ teaspoon (adjust to taste)
- Vegetable broth - 200 ml
- Salt - to taste
- Oil (coconut or vegetable) - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a blender, combine cashews and coconut milk. Blend until smooth and creamy, then set aside.
- In a large pan, heat oil over medium heat. Add cumin seeds and let them crackle for a few seconds.
- Add chopped onions, garlic, and ginger to the pan. Sauté until the onions are translucent.
- Stir in the tomato puree, coriander powder, garam masala, turmeric powder, and red chili powder. Cook for about 5 minutes until the mixture thickens.
- Add the vegetable broth and bring to a simmer. Once simmering, stir in the cashew-coconut mixture and mix well.
- Add green peas and let the sauce simmer for another 5-7 minutes until the peas are cooked through.
- Add the cooked pasta to the sauce and toss well to coat. Cook for an additional 2-3 minutes to heat through.
- Season with salt to taste, and garnish with fresh cilantro before serving.
