  • Ginger - 1 inch, grated
  • Garlic - 3 cloves, minced
  • Bell pepper (mixed colors) - 1 cup, diced
  • Tomato - 1 medium, chopped
  • Red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the gluten-free pasta according to package instructions, then drain and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add cumin seeds and let them splutter.
  3. Add the chopped onion and sauté until it turns translucent, about 3-4 minutes.
  4. Stir in the grated ginger and minced garlic, cooking for another 1-2 minutes until fragrant.
  5. Add the diced bell peppers and cook for 5 minutes until they soften.
  6. Mix in the chopped tomato, red chili powder, turmeric powder, and salt. Cook for another 5 minutes until the tomatoes break down.
  7. Add the cooked pasta to the pan, tossing to coat it in the spice mixture.
  8. Sprinkle garam masala over the pasta and mix well. Cook for an additional 2-3 minutes to heat through.
  9. Remove from heat, drizzle with lemon juice, and garnish with fresh coriander leaves before serving.
