Steps
- Cook the gluten-free pasta according to package instructions, then drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onion and sauté until it turns translucent, about 3-4 minutes.
- Stir in the grated ginger and minced garlic, cooking for another 1-2 minutes until fragrant.
- Add the diced bell peppers and cook for 5 minutes until they soften.
- Mix in the chopped tomato, red chili powder, turmeric powder, and salt. Cook for another 5 minutes until the tomatoes break down.
- Add the cooked pasta to the pan, tossing to coat it in the spice mixture.
- Sprinkle garam masala over the pasta and mix well. Cook for an additional 2-3 minutes to heat through.
- Remove from heat, drizzle with lemon juice, and garnish with fresh coriander leaves before serving.
