- Canned chickpeas - 240 grams (drained and rinsed)
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, diced
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, finely chopped (adjust to taste)
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Fresh cilantro - a handful, chopped (for garnish)
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Water - 500 ml
Steps
- Cook the pasta according to package instructions until al dente, then drain and set aside.
- In a large pan, heat the olive oil over medium heat and add cumin seeds, allowing them to sizzle for a few seconds.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, grated ginger, and green chili, cooking for another 2 minutes until fragrant.
- Add the diced tomato and cook until it softens, about 3-4 minutes.
- Mix in the coriander powder, turmeric powder, and salt, and cook for an additional minute.
- Add the drained chickpeas and water, bringing the mixture to a simmer. Cook for 5-7 minutes to allow the flavors to meld.
- Stir in the garam masala and adjust the seasoning with black pepper and salt if needed.
- Add the cooked pasta to the chickpea mixture, tossing everything to combine and heat through for another 2-3 minutes.
- Serve hot, garnished with fresh cilantro.
