  • Pasta (any shape) - 200 grams
  • Canned chickpeas - 240 grams (drained and rinsed)
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, finely chopped (adjust to taste)
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Fresh cilantro - a handful, chopped (for garnish)
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 500 ml

Steps

  1. Cook the pasta according to package instructions until al dente, then drain and set aside.
  2. In a large pan, heat the olive oil over medium heat and add cumin seeds, allowing them to sizzle for a few seconds.
  3. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic, grated ginger, and green chili, cooking for another 2 minutes until fragrant.
  5. Add the diced tomato and cook until it softens, about 3-4 minutes.
  6. Mix in the coriander powder, turmeric powder, and salt, and cook for an additional minute.
  7. Add the drained chickpeas and water, bringing the mixture to a simmer. Cook for 5-7 minutes to allow the flavors to meld.
  8. Stir in the garam masala and adjust the seasoning with black pepper and salt if needed.
  9. Add the cooked pasta to the chickpea mixture, tossing everything to combine and heat through for another 2-3 minutes.
  10. Serve hot, garnished with fresh cilantro.
