  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Tomato puree - 100 grams
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh coriander - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add cumin seeds and allow them to crackle for a few seconds.
  3. Add the finely chopped onion to the skillet and sauté until golden brown.
  4. Stir in the minced garlic and grated ginger. Sauté for another minute until fragrant.
  5. Add the tomato puree, turmeric powder, red chili powder, garam masala, and salt. Cook for about 5-7 minutes, stirring occasionally, until the oil separates from the mixture.
  6. Add the cooked gluten-free pasta to the skillet. Toss well to coat the pasta in the sauce, cooking for an additional 2-3 minutes.
  7. Remove from heat, stir in the fresh coriander and lemon juice, and serve hot.
