Ingredients

  • Pasta (spaghetti or penne) - 150 grams
  • Oil (coconut or olive) - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 3 cloves
  • Ginger (grated) - 1 teaspoon
  • Green chili (slit) - 1
  • Bell pepper (chopped) - 1 medium
  • Carrot (finely chopped) - 1 medium
  • Green peas (fresh or frozen) - 100 grams
  • Tomato (chopped) - 1 medium
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Coriander leaves (chopped) - 2 tablespoons

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat the oil over medium heat. Add mustard seeds and cumin seeds; let them splutter.
  3. Add chopped onion, garlic, and ginger. Sauté until the onion is translucent.
  4. Add the slit green chili, bell pepper, carrot, and green peas. Cook for about 5-7 minutes until the vegetables are slightly tender.
  5. Stir in the chopped tomato, turmeric powder, red chili powder, garam masala, and salt. Cook for another 5 minutes until the tomatoes soften.
  6. Add the cooked pasta to the vegetable mixture, tossing well to combine. Cook for an additional 2-3 minutes to heat through.
  7. Garnish with chopped coriander leaves before serving.
