Ingredients

  • Pasta (fusilli or penne) - 150 grams
  • Whole wheat flour - 100 grams
  • Egg - 1 large
  • Water - 50 ml
  • Salt - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Green chili (finely chopped) - 1 small
  • Onion (finely chopped) - 1 medium
  • Fresh cilantro (chopped) - 2 tablespoons
  • Oil (for frying) - 3 tablespoons

Steps

  1. Cook the pasta in salted boiling water according to package instructions until al dente, then drain and set aside.
  2. In a mixing bowl, combine whole wheat flour, salt, and water to form a dough. Knead for about 5 minutes until smooth, then cover and let it rest for 10 minutes.
  3. In a frying pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them crackle. Then, add chopped onion and sauté until translucent.
  4. Add the green chili, turmeric powder, coriander powder, and red chili powder to the onion, stirring well to combine. Cook for 2-3 minutes until fragrant.
  5. Add the cooked pasta to the pan, mixing thoroughly. Add chopped cilantro and adjust seasoning if needed. Remove from heat and let it cool slightly.
  6. Divide the dough into two equal portions and roll each portion into a thin circle. Place half of the pasta mixture in the center of each circle.
  7. Fold the dough over the filling to create a semi-circle, pressing the edges to seal. Beat the egg in a bowl and brush it on both sides of the filled roti.
  8. In a frying pan, heat 2 tablespoons of oil over medium heat. Fry each roti until golden brown on both sides, about 3-4 minutes per side.
  9. Serve hot with chutney or yogurt on the side.
