- Pasta (fusilli or penne) - 150 grams
- Whole wheat flour - 100 grams
- Egg - 1 large
- Water - 50 ml
- Salt - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Red chili powder - 1/2 teaspoon
- Green chili (finely chopped) - 1 small
- Onion (finely chopped) - 1 medium
- Fresh cilantro (chopped) - 2 tablespoons
- Oil (for frying) - 3 tablespoons
Steps
- Cook the pasta in salted boiling water according to package instructions until al dente, then drain and set aside.
- In a mixing bowl, combine whole wheat flour, salt, and water to form a dough. Knead for about 5 minutes until smooth, then cover and let it rest for 10 minutes.
- In a frying pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them crackle. Then, add chopped onion and sauté until translucent.
- Add the green chili, turmeric powder, coriander powder, and red chili powder to the onion, stirring well to combine. Cook for 2-3 minutes until fragrant.
- Add the cooked pasta to the pan, mixing thoroughly. Add chopped cilantro and adjust seasoning if needed. Remove from heat and let it cool slightly.
- Divide the dough into two equal portions and roll each portion into a thin circle. Place half of the pasta mixture in the center of each circle.
- Fold the dough over the filling to create a semi-circle, pressing the edges to seal. Beat the egg in a bowl and brush it on both sides of the filled roti.
- In a frying pan, heat 2 tablespoons of oil over medium heat. Fry each roti until golden brown on both sides, about 3-4 minutes per side.
- Serve hot with chutney or yogurt on the side.
