Ingredients

  • Semolina - 100 grams
  • All-purpose flour - 50 grams
  • Baking soda - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Water - as needed
  • Chickpeas - 100 grams (cooked)
  • Potato - 1 medium (boiled and mashed)
  • Onion - 1 small (finely chopped)
  • Cilantro - 2 tablespoons (finely chopped)
  • Green chili - 1 (finely chopped)
  • Black salt - 1/2 teaspoon
  • Chaat masala - 1 teaspoon
  • Pomegranate seeds - 2 tablespoons (for garnish)
  • Tamarind - 50 grams (pulp)
  • Cumin powder - 1 teaspoon
  • Mint leaves - 1/2 cup (fresh)
  • Lemon juice - 1 tablespoon
  • Cold water - 500 ml

Steps

  1. In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 15 minutes.
  2. While the dough is resting, prepare the filling by mixing cooked chickpeas, mashed potato, chopped onion, cilantro, green chili, black salt, and chaat masala in a bowl. Set aside.
  3. For the pani, soak tamarind in warm water for 10 minutes, then strain to remove any solids. In a blender, combine mint leaves, cumin powder, lemon juice, and the tamarind water. Blend until smooth, then dilute with cold water to desired taste and chill in the refrigerator.
  4. After resting, divide the dough into small balls and roll them out into thin circles (about 2 inches in diameter). Heat oil in a deep pan, and fry the puris until they puff up and turn golden brown. Remove and drain on paper towels.
  5. To serve, gently crack the top of each puri, fill it with a spoonful of the chickpea and potato mixture, and dip it into the chilled mint pani. Garnish with pomegranate seeds and enjoy!
