- Semolina - 100 grams
- All-purpose flour - 50 grams
- Baking soda - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Water - as needed
- Chickpeas - 100 grams (cooked)
- Potato - 1 medium (boiled and mashed)
- Onion - 1 small (finely chopped)
- Cilantro - 2 tablespoons (finely chopped)
- Green chili - 1 (finely chopped)
- Black salt - 1/2 teaspoon
- Chaat masala - 1 teaspoon
- Pomegranate seeds - 2 tablespoons (for garnish)
- Tamarind - 50 grams (pulp)
- Cumin powder - 1 teaspoon
- Mint leaves - 1/2 cup (fresh)
- Lemon juice - 1 tablespoon
- Cold water - 500 ml
Steps
- In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 15 minutes.
- While the dough is resting, prepare the filling by mixing cooked chickpeas, mashed potato, chopped onion, cilantro, green chili, black salt, and chaat masala in a bowl. Set aside.
- For the pani, soak tamarind in warm water for 10 minutes, then strain to remove any solids. In a blender, combine mint leaves, cumin powder, lemon juice, and the tamarind water. Blend until smooth, then dilute with cold water to desired taste and chill in the refrigerator.
- After resting, divide the dough into small balls and roll them out into thin circles (about 2 inches in diameter). Heat oil in a deep pan, and fry the puris until they puff up and turn golden brown. Remove and drain on paper towels.
- To serve, gently crack the top of each puri, fill it with a spoonful of the chickpea and potato mixture, and dip it into the chilled mint pani. Garnish with pomegranate seeds and enjoy!
