Ingredients

  • Paneer - 250 grams
  • Greek yogurt - 100 grams

  • Red chili powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Bell peppers (mixed colors) - 1 cup, diced
  • Onion - 1 medium, diced
  • Olive oil - 1 tablespoon
  • Whole wheat roti or wraps - 2 pieces
  • Cilantro - for garnish

Steps

  1. Cut the paneer into cubes and place them in a bowl.
  2. In a separate bowl, mix Greek yogurt, garam masala, turmeric, red chili powder, cumin, lemon juice, and salt to create a marinade.
  3. Add the paneer cubes to the marinade and mix well to coat. Let it marinate for at least 15 minutes.
  4. In a skillet, heat olive oil over medium heat. Add diced onions and bell peppers, sautéing until they are slightly softened, about 5-7 minutes.
  5. Add the marinated paneer to the skillet and cook for another 10 minutes, turning occasionally until the paneer is golden brown and cooked through.
  6. While the paneer is cooking, warm the roti or wraps on a separate pan for about 1-2 minutes on each side.
  7. To assemble, place the cooked paneer and vegetables in the center of each roti, sprinkle with fresh cilantro, and roll them up tightly.
  8. Serve warm with mint chutney or yogurt dip.
