Ingredients

  • Paneer - 200 grams
  • Bell pepper (mixed colors) - 1 cup, diced

  • Cucumber - 1 medium, sliced
  • Cherry tomatoes - 1 cup, halved
  • Whole wheat tortillas - 2 pieces
  • Greek yogurt - 100 grams
  • Mint leaves - 1/4 cup, chopped
  • Lemon juice - 1 tablespoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - to taste
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the paneer into cubed pieces and marinate it with yogurt, garam masala, turmeric, red chili powder, cumin powder, and salt. Let it sit for at least 15 minutes.
  3. In a baking tray, place the marinated paneer and drizzle with olive oil. Bake for 15-20 minutes or until golden and slightly charred.
  4. While the paneer is baking, prepare the salad by combining diced bell peppers, sliced red onion, cucumber, and cherry tomatoes in a mixing bowl.
  5. In a small bowl, mix chopped mint leaves, lemon juice, and a pinch of salt to create a dressing.
  6. Once the paneer is done, let it cool slightly and then add it to the salad mixture.
  7. Drizzle the mint dressing over the salad and toss gently to combine.
  8. To assemble, take a whole wheat tortilla, place a generous amount of the paneer salad mixture in the center, and wrap it tightly. Repeat with the second tortilla.
