- Cucumber - 1 medium, sliced
- Cherry tomatoes - 1 cup, halved
- Whole wheat tortillas - 2 pieces
- Greek yogurt - 100 grams
- Mint leaves - 1/4 cup, chopped
- Lemon juice - 1 tablespoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - to taste
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut the paneer into cubed pieces and marinate it with yogurt, garam masala, turmeric, red chili powder, cumin powder, and salt. Let it sit for at least 15 minutes.
- In a baking tray, place the marinated paneer and drizzle with olive oil. Bake for 15-20 minutes or until golden and slightly charred.
- While the paneer is baking, prepare the salad by combining diced bell peppers, sliced red onion, cucumber, and cherry tomatoes in a mixing bowl.
- In a small bowl, mix chopped mint leaves, lemon juice, and a pinch of salt to create a dressing.
- Once the paneer is done, let it cool slightly and then add it to the salad mixture.
- Drizzle the mint dressing over the salad and toss gently to combine.
- To assemble, take a whole wheat tortilla, place a generous amount of the paneer salad mixture in the center, and wrap it tightly. Repeat with the second tortilla.
