- Paneer - 200 grams
- Basmati rice - 1 cup (200 grams)
- Yogurt - 1/2 cup (125 grams)
- Bell pepper - 1 medium, diced
- Onion - 1 medium, sliced
- Tomato - 1 medium, chopped
- Ginger-garlic paste - 1 tablespoon
- Biryani masala - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Cilantro - 1/4 cup, chopped
- Mint leaves - 1/4 cup, chopped
- Lemon juice - 1 tablespoon
- Cooking oil - 2 tablespoons
- Salt - to taste
- Water - 2 cups (500 ml)
Steps
- Cut the paneer into cubes and marinate it in yogurt, ginger-garlic paste, biryani masala, turmeric powder, red chili powder, lemon juice, and salt for at least 30 minutes.
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot, heat cooking oil over medium heat. Add sliced onions and sauté until golden brown.
- Add chopped tomatoes and cook until soft. Then, add the marinated paneer along with the diced bell pepper and cook for about 5-7 minutes until the paneer is slightly charred.
- Add the soaked and drained basmati rice to the pot and stir gently to combine.
- Pour in 2 cups of water and add chopped cilantro and mint leaves. Season with salt to taste.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it cook for 15-20 minutes until the rice is fully cooked and the water is absorbed.
- Once done, fluff the rice gently with a fork and serve hot, garnished with additional cilantro and mint if desired.
