Ingredients

  • Paneer - 200 grams
  • Basmati rice - 1 cup (200 grams)
  • Yogurt - 1/2 cup (125 grams)
  • Bell pepper - 1 medium, diced
  • Onion - 1 medium, sliced
  • Tomato - 1 medium, chopped
  • Ginger-garlic paste - 1 tablespoon
  • Biryani masala - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cilantro - 1/4 cup, chopped
  • Mint leaves - 1/4 cup, chopped
  • Lemon juice - 1 tablespoon
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Water - 2 cups (500 ml)

Steps

  1. Cut the paneer into cubes and marinate it in yogurt, ginger-garlic paste, biryani masala, turmeric powder, red chili powder, lemon juice, and salt for at least 30 minutes.
  2. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  3. In a large pot, heat cooking oil over medium heat. Add sliced onions and sauté until golden brown.
  4. Add chopped tomatoes and cook until soft. Then, add the marinated paneer along with the diced bell pepper and cook for about 5-7 minutes until the paneer is slightly charred.
  5. Add the soaked and drained basmati rice to the pot and stir gently to combine.
  6. Pour in 2 cups of water and add chopped cilantro and mint leaves. Season with salt to taste.
  7. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it cook for 15-20 minutes until the rice is fully cooked and the water is absorbed.
  8. Once done, fluff the rice gently with a fork and serve hot, garnished with additional cilantro and mint if desired.
