- Paneer - 200 grams
- Basmati rice - 1 cup (200 grams)
- Yogurt - 1/2 cup (120 grams)
- Onion - 1 large, thinly sliced
- Tomato - 1 medium, chopped
- Ginger-garlic paste - 1 tablespoon
- Biryani masala - 1 tablespoon
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped
- Mint leaves - 2 tablespoons, chopped
- Oil - 2 tablespoons
- Salt - to taste
- Water - 2 cups (500 ml)
Steps
- Start by marinating the paneer cubes in yogurt, red chili powder, turmeric powder, and salt. Let it sit for at least 20 minutes.
- Heat 1 tablespoon of oil in a pan over medium heat and add cumin seeds. Once they splutter, add the sliced onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for another minute. Then add chopped tomatoes and cook until they soften.
- Stir in biryani masala, coriander powder, and garam masala. Cook for 2-3 minutes until the spices are well combined.
- In a separate pan, heat the remaining oil and add the marinated paneer. Cook until the paneer is golden brown on all sides. Remove and set aside.
- In the same pan used for paneer, add water and bring it to a boil. Add the rinsed basmati rice and salt, cooking until the rice is 70% done (about 5-6 minutes).
- Layer the partially cooked rice over the masala in the pan. Add the cooked paneer on top, followed by chopped cilantro and mint leaves.
- Cover the pan with a tight lid and cook on low heat for another 15 minutes, allowing the flavors to meld.
- Remove from heat, let it rest for 5 minutes, then fluff the biryani gently before serving.
