Ingredients

  • Paneer - 200 grams
  • Basmati rice - 1 cup (200 grams)
  • Yogurt - 1/2 cup (120 grams)
  • Onion - 1 large, thinly sliced
  • Tomato - 1 medium, chopped
  • Ginger-garlic paste - 1 tablespoon
  • Biryani masala - 1 tablespoon
  • Red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Oil - 2 tablespoons
  • Salt - to taste
  • Water - 2 cups (500 ml)

Steps

  1. Start by marinating the paneer cubes in yogurt, red chili powder, turmeric powder, and salt. Let it sit for at least 20 minutes.
  2. Heat 1 tablespoon of oil in a pan over medium heat and add cumin seeds. Once they splutter, add the sliced onions and sauté until golden brown.
  3. Add ginger-garlic paste and sauté for another minute. Then add chopped tomatoes and cook until they soften.
  4. Stir in biryani masala, coriander powder, and garam masala. Cook for 2-3 minutes until the spices are well combined.
  5. In a separate pan, heat the remaining oil and add the marinated paneer. Cook until the paneer is golden brown on all sides. Remove and set aside.
  6. In the same pan used for paneer, add water and bring it to a boil. Add the rinsed basmati rice and salt, cooking until the rice is 70% done (about 5-6 minutes).
  7. Layer the partially cooked rice over the masala in the pan. Add the cooked paneer on top, followed by chopped cilantro and mint leaves.
  8. Cover the pan with a tight lid and cook on low heat for another 15 minutes, allowing the flavors to meld.
  9. Remove from heat, let it rest for 5 minutes, then fluff the biryani gently before serving.
