Ingredients
- Paneer - 200 grams
- Basmati rice - 1 cup (200 grams)
- Yogurt - 1/2 cup (120 grams)
- Ginger-garlic paste - 1 tablespoon
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Bell pepper (capsicum) - 1 medium, diced
- Onion - 1 medium, sliced
- Tomato - 1 medium, chopped
- Cilantro (fresh coriander) - 2 tablespoons, chopped
- Mint leaves - 2 tablespoons, chopped
- Cooking oil - 2 tablespoons
- Salt - to taste
- Water - 2 cups (500 ml)
Steps
- In a bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, lemon juice, and salt. Mix well to form a marinade.
- Cut the paneer into cubes and add it to the marinade. Let it marinate for at least 30 minutes.
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot, heat 1 tablespoon of cooking oil over medium heat. Add sliced onions and sauté until golden brown.
- Add the marinated paneer and diced bell pepper to the pot and cook for about 5-7 minutes until the paneer is slightly charred. Remove from the pot and set aside.
- In the same pot, add the chopped tomatoes and sauté until soft. Add the soaked basmati rice, 2 cups of water, and salt to taste. Bring to a boil.
- Once boiling, reduce the heat to low, cover with a lid, and let it simmer for about 15-20 minutes, or until the rice is cooked and water is absorbed.
- Once the rice is cooked, gently fluff it with a fork and then layer the paneer and vegetables on top.
- Sprinkle chopped cilantro and mint leaves over the top. Cover and let it rest for 5-10 minutes before serving.
- Serve hot with raita or salad on the side.
