Ingredients

  • Paneer - 200 grams
  • Basmati rice - 1 cup (200 grams)
  • Yogurt - 1/2 cup (120 grams)
  • Ginger-garlic paste - 1 tablespoon
  • Red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Bell pepper (capsicum) - 1 medium, diced
  • Onion - 1 medium, sliced
  • Tomato - 1 medium, chopped
  • Cilantro (fresh coriander) - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Water - 2 cups (500 ml)

Steps

  1. In a bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, lemon juice, and salt. Mix well to form a marinade.
  2. Cut the paneer into cubes and add it to the marinade. Let it marinate for at least 30 minutes.
  3. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  4. In a large pot, heat 1 tablespoon of cooking oil over medium heat. Add sliced onions and sauté until golden brown.
  5. Add the marinated paneer and diced bell pepper to the pot and cook for about 5-7 minutes until the paneer is slightly charred. Remove from the pot and set aside.
  6. In the same pot, add the chopped tomatoes and sauté until soft. Add the soaked basmati rice, 2 cups of water, and salt to taste. Bring to a boil.
  7. Once boiling, reduce the heat to low, cover with a lid, and let it simmer for about 15-20 minutes, or until the rice is cooked and water is absorbed.
  8. Once the rice is cooked, gently fluff it with a fork and then layer the paneer and vegetables on top.
  9. Sprinkle chopped cilantro and mint leaves over the top. Cover and let it rest for 5-10 minutes before serving.
  10. Serve hot with raita or salad on the side.
