- Basmati rice - 1 cup
- Paneer (tofu for vegan option) - 150 grams, cubed
- Onion - 1 medium, thinly sliced
- Tomato - 1 medium, chopped
- Green peas - 1/2 cup
- Carrot - 1 medium, diced
- Green bell pepper - 1/2, diced
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
- Water - 2 cups
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak for 20 minutes.
- In a large pot, heat the oil over medium heat and add cumin seeds. Sauté until they start to crackle.
- Add the sliced onion and cook until golden brown, then add the ginger and garlic, sautéing for an additional minute.
- Stir in the chopped tomato, diced carrot, green peas, and bell pepper. Cook for about 5 minutes until the vegetables soften.
- Add the coriander powder, turmeric powder, and salt. Mix well and cook for another minute.
- Drain the soaked rice and add it to the pot, gently mixing it with the vegetables and spices.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, remove from heat and let it sit, covered, for another 5 minutes.
- Gently fluff the rice with a fork and fold in the cubed paneer. Sprinkle garam masala on top.
- Garnish with fresh coriander leaves and serve hot.
