Ingredients

  • Basmati rice - 1 cup
  • Paneer (tofu for vegan option) - 150 grams, cubed
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, chopped
  • Green peas - 1/2 cup
  • Carrot - 1 medium, diced
  • Green bell pepper - 1/2, diced
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish
  • Water - 2 cups

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak for 20 minutes.
  2. In a large pot, heat the oil over medium heat and add cumin seeds. Sauté until they start to crackle.
  3. Add the sliced onion and cook until golden brown, then add the ginger and garlic, sautéing for an additional minute.
  4. Stir in the chopped tomato, diced carrot, green peas, and bell pepper. Cook for about 5 minutes until the vegetables soften.
  5. Add the coriander powder, turmeric powder, and salt. Mix well and cook for another minute.
  6. Drain the soaked rice and add it to the pot, gently mixing it with the vegetables and spices.
  7. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  8. After 15 minutes, remove from heat and let it sit, covered, for another 5 minutes.
  9. Gently fluff the rice with a fork and fold in the cubed paneer. Sprinkle garam masala on top.
  10. Garnish with fresh coriander leaves and serve hot.
