- Pasta (penne or fusilli) - 200 grams
- Paneer - 150 grams, cubed
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Bell pepper - 1 medium, diced
- Spinach - 100 grams, fresh
- Tomato puree - 200 grams
- Garam masala - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander - for garnish
Steps
- Cook the pasta according to package instructions until al dente; drain and set aside.
- In a large pan, heat olive oil over medium heat and add the minced garlic and chopped onion. Sauté until the onion is translucent.
- Add the diced bell pepper and cook for another 3-4 minutes until soft.
- Stir in the cubed paneer and sauté until golden brown on all sides.
- Add the fresh spinach and cook until wilted.
- Pour in the tomato puree and sprinkle in the garam masala, salt, and black pepper. Stir well and let it simmer for about 5 minutes.
- Combine the cooked pasta with the paneer and vegetable mixture, tossing to coat evenly.
- Serve hot, garnished with fresh coriander.
