Ingredients

  • Paneer - 200 grams
  • Cashew nuts - 30 grams
  • Onion - 1 medium, finely chopped
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies - 2, slit
  • Tomato puree - 100 grams
  • Fresh cream - 50 ml
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - to taste
  • Oil or ghee - 2 tablespoons
  • Coriander leaves - for garnish

Steps

  1. Start by cutting the paneer into thick slices and gently frying them in a tablespoon of oil or ghee until golden brown. Set aside.
  2. In a blender, grind the cashew nuts into a fine paste, adding a little water if necessary.
  3. In a pan, heat another tablespoon of oil or ghee over medium heat, and add the chopped onions. Sauté until they turn golden brown.
  4. Add the ginger-garlic paste and slit green chilies to the pan, cooking for another 1-2 minutes until fragrant.
  5. Stir in the tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil starts to separate from the mixture.
  6. Add the cashew paste and mix well, cooking for 3-4 minutes. If the gravy is too thick, add a splash of water to reach your desired consistency.
  7. Reduce the heat and mix in the fresh cream and garam masala, stirring until well combined.
  8. Place the fried paneer slices into the gravy, gently coating them with the sauce. Let them simmer for 5 minutes on low heat.
  9. Garnish with freshly chopped coriander leaves before serving.
