Steps
- Crumble the paneer into a bowl until it resembles fine crumbs.
- In a non-stick pan, heat the almond milk on medium heat until it begins to simmer.
- Add the crumbled paneer to the simmering almond milk, stirring continuously to avoid lumps.
- Reduce the heat to low and add stevia or erythritol, cardamom powder, and saffron strands (if using).
- Cook for about 10-15 minutes, stirring frequently, until the mixture thickens to a pudding-like consistency.
- Remove from heat and stir in the rose water (if using).
- Allow the kheer to cool slightly before serving.
- Garnish with chopped pistachios and almonds before serving.
