Ingredients

  • Paneer - 200 grams
  • Almond milk - 1 cup (240 ml)
  • Stevia or Erythritol - 2 tablespoons
  • Cardamom powder - 1/2 teaspoon
  • Chopped pistachios - 2 tablespoons
  • Chopped almonds - 2 tablespoons
  • Saffron strands - a pinch (optional)
  • Rose water - 1 teaspoon (optional)

Steps

  1. Crumble the paneer into a bowl until it resembles fine crumbs.
  2. In a non-stick pan, heat the almond milk on medium heat until it begins to simmer.
  3. Add the crumbled paneer to the simmering almond milk, stirring continuously to avoid lumps.
  4. Reduce the heat to low and add stevia or erythritol, cardamom powder, and saffron strands (if using).
  5. Cook for about 10-15 minutes, stirring frequently, until the mixture thickens to a pudding-like consistency.
  6. Remove from heat and stir in the rose water (if using).
  7. Allow the kheer to cool slightly before serving.
  8. Garnish with chopped pistachios and almonds before serving.
