Paneer Bhurji Skewers

- Paneer - 200 grams
- Capsicum (bell pepper) - 1 medium, diced
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Green Chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Turmeric Powder - 1/4 teaspoon
- Red Chili Powder - 1/2 teaspoon
- Garam Masala - 1/2 teaspoon
- Coriander Powder - 1/2 teaspoon
- Cumin Powder - 1/4 teaspoon
- Salt - to taste
- Cilantro (coriander leaves) - 2 tablespoons, chopped
- Oil - 1 tablespoon
- Skewers - 4 (soaked in water if wooden)
Steps
- Heat oil in a pan over medium heat. Add finely chopped onions and sauté until translucent.
- Add grated ginger and green chili, and cook for another minute.
- Stir in diced capsicum and tomatoes, cooking until they soften, about 3-4 minutes.
- Add turmeric powder, red chili powder, garam masala, coriander powder, and salt. Mix well and cook for 2 minutes.
- Crumble the paneer into the mixture and stir until well combined. Cook for another 3-4 minutes until heated through.
- Remove from heat and mix in chopped cilantro. Let the mixture cool slightly.
- Preheat the grill or BBQ. Take the soaked skewers and thread the paneer bhurji mixture onto them, alternating with any remaining diced capsicum and onion.
- Grill the skewers for about 8-10 minutes, turning occasionally until lightly charred.
- Serve hot with mint chutney or yogurt dip.
