Ingredients

  • Paneer - 200 grams
  • Capsicum (bell pepper) - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Green Chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Turmeric Powder - 1/4 teaspoon
  • Red Chili Powder - 1/2 teaspoon
  • Garam Masala - 1/2 teaspoon
  • Coriander Powder - 1/2 teaspoon
  • Cumin Powder - 1/4 teaspoon
  • Salt - to taste
  • Cilantro (coriander leaves) - 2 tablespoons, chopped
  • Oil - 1 tablespoon
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. Heat oil in a pan over medium heat. Add finely chopped onions and sauté until translucent.
  2. Add grated ginger and green chili, and cook for another minute.
  3. Stir in diced capsicum and tomatoes, cooking until they soften, about 3-4 minutes.
  4. Add turmeric powder, red chili powder, garam masala, coriander powder, and salt. Mix well and cook for 2 minutes.
  5. Crumble the paneer into the mixture and stir until well combined. Cook for another 3-4 minutes until heated through.
  6. Remove from heat and mix in chopped cilantro. Let the mixture cool slightly.
  7. Preheat the grill or BBQ. Take the soaked skewers and thread the paneer bhurji mixture onto them, alternating with any remaining diced capsicum and onion.
  8. Grill the skewers for about 8-10 minutes, turning occasionally until lightly charred.
  9. Serve hot with mint chutney or yogurt dip.
