Ingredients

  • Paneer - 200 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Coriander leaves - 2 tablespoons, chopped
  • Whole wheat flour - 1 cup (for parathas)
  • Water - as needed (for dough)
  • Butter - 1 tablespoon (for cooking parathas)
  • Lettuce leaves - 2, for wrapping
  • Cucumber - 1/2, sliced (optional)

Steps

  1. In a mixing bowl, knead the whole wheat flour with a pinch of salt and enough water to form a soft dough. Cover it with a damp cloth and let it rest for 15 minutes.
  2. Heat oil in a pan over medium heat. Add chopped onions and sauté until translucent.
  3. Add grated ginger and chopped green chili; sauté for another minute.
  4. Stir in the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until tomatoes are soft.
  5. Crumble the paneer into the pan, mix well, and cook for 5-7 minutes, stirring occasionally. Add garam masala and chopped coriander leaves, mix, and remove from heat.
  6. Divide the rested dough into 2 equal portions and roll each portion into a ball. Roll out each ball into a circle about 6 inches in diameter.
  7. Heat a tawa or skillet over medium heat. Cook each rolled out paratha on both sides until golden brown, applying butter on both sides while cooking.
  8. To assemble, place a paratha on a plate, add a lettuce leaf, spoon the paneer bhurji mixture on top, and add cucumber slices if desired. Roll it up tightly.
  9. Serve warm with chutney or yogurt on the side.
