- Basmati rice - 1 cup
- Paneer - 200 grams, crumbled
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Green chili - 1, finely chopped
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Fresh coriander leaves - a handful, chopped
- Cooking oil - 2 tablespoons
- Salt - to taste
- Water - 2 cups (for rice)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a pot, bring 2 cups of water to a boil. Add the soaked rice and a pinch of salt. Cook on low heat for 15 minutes or until rice is fluffy and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- In a large skillet, heat 2 tablespoons of cooking oil over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onions and sauté until they turn golden brown.
- Stir in the grated ginger, minced garlic, and chopped green chili, cooking for another minute until fragrant.
- Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften and the oil starts to separate.
- Add the crumbled paneer and garam masala to the skillet. Mix well and cook for 5-7 minutes until the paneer is heated through and well combined with the spices.
- Turn off the heat and stir in the chopped coriander leaves.
- Serve the paneer bhurji hot over the fluffy basmati rice.
