Ingredients

  • Basmati rice - 1 cup
  • Paneer - 200 grams, crumbled
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Fresh coriander leaves - a handful, chopped
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Water - 2 cups (for rice)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a pot, bring 2 cups of water to a boil. Add the soaked rice and a pinch of salt. Cook on low heat for 15 minutes or until rice is fluffy and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  3. In a large skillet, heat 2 tablespoons of cooking oil over medium heat. Add cumin seeds and let them splutter.
  4. Add the finely chopped onions and sauté until they turn golden brown.
  5. Stir in the grated ginger, minced garlic, and chopped green chili, cooking for another minute until fragrant.
  6. Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften and the oil starts to separate.
  7. Add the crumbled paneer and garam masala to the skillet. Mix well and cook for 5-7 minutes until the paneer is heated through and well combined with the spices.
  8. Turn off the heat and stir in the chopped coriander leaves.
  9. Serve the paneer bhurji hot over the fluffy basmati rice.
