Ingredients

  • Paneer - 200 grams
  • Onion - 1 medium, finely chopped

  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Almond flour - 2 tablespoons (for topping)
  • Grated cheese (optional) - 2 tablespoons

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a non-stick pan, heat olive oil over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped onion, green chili, ginger, and garlic. Sauté until the onion becomes translucent.
  4. Add chopped tomato, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften.
  5. Crumble the paneer into the pan and mix well with the vegetables. Cook for 5-7 minutes, stirring occasionally.
  6. Stir in garam masala and chopped coriander leaves. Remove from heat and let the mixture cool slightly.
  7. Transfer the paneer mixture into a baking dish and spread it evenly.
  8. In a small bowl, mix almond flour and grated cheese (if using). Sprinkle this mixture evenly over the paneer bhurji.
  9. Bake in the preheated oven for 15-20 minutes, or until the top is golden and crispy.
  10. Remove from the oven, let it cool for a few minutes, then serve hot.
