Ingredients

  • Paneer - 200 grams
  • Sugar - 50 grams
  • Ghee - 2 tablespoons
  • Milk - 100 ml
  • Cardamom powder - 1/2 teaspoon
  • Chopped nuts (almonds, pistachios) - 2 tablespoons
  • Saffron strands - a pinch

Steps

  1. Grate the paneer and set it aside.
  2. In a non-stick pan, heat 2 tablespoons of ghee over medium heat.
  3. Add the grated paneer to the pan and sauté for 2-3 minutes until it becomes warm.
  4. Add 100 ml of milk and 50 grams of sugar to the pan, stirring continuously until the mixture thickens.
  5. Sprinkle in 1/2 teaspoon of cardamom powder and mix well.
  6. Cook the mixture for an additional 5-7 minutes until it leaves the sides of the pan.
  7. Transfer the mixture to a greased plate or tray and spread it evenly.
  8. Garnish the top with chopped nuts and saffron strands, pressing them gently into the surface.
  9. Allow the barfi to cool for at least 15 minutes before cutting it into squares or diamonds.
