Ingredients

  • Basmati rice - 100 grams
  • Moong dal (split green gram) - 20 grams
  • Toor dal (pigeon pea) - 20 grams
  • Masoor dal (red lentil) - 20 grams
  • Urad dal (black gram) - 20 grams
  • Chana dal (split chickpeas) - 20 grams
  • Ghee (clarified butter) - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Asafoetida - 1/4 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Ginger (grated) - 1 teaspoon
  • Green chilies (slit) - 1-2
  • Salt - to taste
  • Water - 4 cups
  • Fresh coriander leaves (for garnish) - a handful

Steps

  1. Rinse the basmati rice and all the lentils under cold water until the water runs clear. Soak them in water for 30 minutes.
  2. In a large pot, heat the ghee over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add asafoetida, grated ginger, and slit green chilies, sautéing for a minute until fragrant.
  4. Stir in the turmeric powder and soaked rice and lentils, mixing well to coat them with the spices.
  5. Add salt and water to the pot, bringing it to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes or until the rice and lentils are cooked and soft.
  6. Stir gently to fluff up the khichdi, then garnish with fresh coriander leaves before serving.
