- Basmati rice - 100 grams
- Moong dal (split green gram) - 20 grams
- Toor dal (pigeon pea) - 20 grams
- Masoor dal (red lentil) - 20 grams
- Urad dal (black gram) - 20 grams
- Chana dal (split chickpeas) - 20 grams
- Ghee (clarified butter) - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Asafoetida - 1/4 teaspoon
- Turmeric powder - 1/2 teaspoon
- Ginger (grated) - 1 teaspoon
- Green chilies (slit) - 1-2
- Salt - to taste
- Water - 4 cups
- Fresh coriander leaves (for garnish) - a handful
Steps
- Rinse the basmati rice and all the lentils under cold water until the water runs clear. Soak them in water for 30 minutes.
- In a large pot, heat the ghee over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add asafoetida, grated ginger, and slit green chilies, sautéing for a minute until fragrant.
- Stir in the turmeric powder and soaked rice and lentils, mixing well to coat them with the spices.
- Add salt and water to the pot, bringing it to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes or until the rice and lentils are cooked and soft.
- Stir gently to fluff up the khichdi, then garnish with fresh coriander leaves before serving.
