Ingredients

  • Fresh spinach - 200 grams
  • Coconut milk - 200 ml
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Water - 300 ml

Steps

  1. Heat olive oil in a pot over medium heat. Add cumin and mustard seeds, and let them splutter.
  2. Add chopped onion, and sauté until translucent.
  3. Stir in minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
  4. Add turmeric powder and salt, mixing well.
  5. Incorporate fresh spinach and sauté until wilted, about 3-4 minutes.
  6. Pour in the water and bring to a boil. Reduce heat and simmer for 10 minutes.
  7. Blend the mixture using an immersion blender until smooth.
  8. Stir in coconut milk and simmer for an additional 5 minutes.
  9. Adjust seasoning with black pepper and lemon juice before serving.
