- Ginger - 1 inch, grated
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Water - 300 ml
Steps
- Heat olive oil in a pot over medium heat. Add cumin and mustard seeds, and let them splutter.
- Add chopped onion, and sauté until translucent.
- Stir in minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
- Add turmeric powder and salt, mixing well.
- Incorporate fresh spinach and sauté until wilted, about 3-4 minutes.
- Pour in the water and bring to a boil. Reduce heat and simmer for 10 minutes.
- Blend the mixture using an immersion blender until smooth.
- Stir in coconut milk and simmer for an additional 5 minutes.
- Adjust seasoning with black pepper and lemon juice before serving.
