- Fresh spinach - 200 grams
- Onion - 1 medium (finely chopped)
- Garlic - 4 cloves (minced)
- Ginger - 1 inch (grated)
- Green chili - 1 (slit)
- Cumin seeds - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander leaves - for garnish
Steps
- Heat olive oil in a large pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions, minced garlic, grated ginger, and slit green chili. Sauté until the onions become translucent.
- Stir in the fresh spinach and cook until wilted, about 3-4 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 10 minutes.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the coconut milk, garam masala, salt, and black pepper. Heat through for another 5 minutes.
- Remove from heat, add lemon juice, and adjust seasoning if necessary.
- Serve hot, garnished with fresh coriander leaves.
