Ingredients

  • Fresh spinach - 200 grams

  • Garlic - 4 cloves (minced)
  • Ginger - 1 inch (grated)
  • Green chili - 1 (slit)
  • Cumin seeds - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat olive oil in a large pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add the chopped onions, minced garlic, grated ginger, and slit green chili. Sauté until the onions become translucent.
  3. Stir in the fresh spinach and cook until wilted, about 3-4 minutes.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 10 minutes.
  5. Using an immersion blender or a regular blender, puree the soup until smooth.
  6. Return the soup to the pot and stir in the coconut milk, garam masala, salt, and black pepper. Heat through for another 5 minutes.
  7. Remove from heat, add lemon juice, and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh coriander leaves.
