- Fresh Spinach - 150 grams
- Plain Yogurt - 200 grams
- Cucumber - 1 medium, grated
- Green Chili - 1, finely chopped
- Cumin Seeds - 1/2 teaspoon
- Salt - to taste
- Black Pepper - 1/4 teaspoon
- Fresh Coriander Leaves - 2 tablespoons, chopped
- Lemon Juice - 1 tablespoon
Steps
- Wash the spinach thoroughly and blanch it in boiling water for 2 minutes, then immediately transfer it to ice water to stop the cooking process.
- Drain the spinach, squeeze out excess water, and chop it finely.
- In a mixing bowl, combine the plain yogurt, grated cucumber, chopped green chili, and the blanched spinach.
- Add cumin seeds, salt, black pepper, chopped coriander leaves, and lemon juice to the mixture.
- Mix all the ingredients well until combined and adjust seasoning if necessary.
- Refrigerate for at least 10 minutes before serving to enhance the flavors.
