Ingredients

  • Fresh Spinach - 150 grams
  • Plain Yogurt - 200 grams
  • Cucumber - 1 medium, grated
  • Green Chili - 1, finely chopped
  • Cumin Seeds - 1/2 teaspoon
  • Salt - to taste
  • Black Pepper - 1/4 teaspoon
  • Fresh Coriander Leaves - 2 tablespoons, chopped
  • Lemon Juice - 1 tablespoon

Steps

  1. Wash the spinach thoroughly and blanch it in boiling water for 2 minutes, then immediately transfer it to ice water to stop the cooking process.
  2. Drain the spinach, squeeze out excess water, and chop it finely.
  3. In a mixing bowl, combine the plain yogurt, grated cucumber, chopped green chili, and the blanched spinach.
  4. Add cumin seeds, salt, black pepper, chopped coriander leaves, and lemon juice to the mixture.
  5. Mix all the ingredients well until combined and adjust seasoning if necessary.
  6. Refrigerate for at least 10 minutes before serving to enhance the flavors.
