- Spinach - 200 grams
- Rice flour - 100 grams
- Besan (chickpea flour) - 50 grams
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 2-4 tablespoons (as needed)
- Olive oil - 1 tablespoon (for brushing)
Steps
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- Wash and blanch the spinach in boiling water for 2-3 minutes, then transfer to cold water to stop the cooking process. Drain and chop finely.
- In a mixing bowl, combine rice flour, besan, cumin seeds, turmeric powder, red chili powder, salt, and black pepper.
- Add the chopped spinach to the dry ingredients and mix well. Gradually add water, a tablespoon at a time, until a soft dough forms.
- Divide the dough into equal portions and roll each portion into small balls.
- On a floured surface (using rice flour), flatten each ball into a small circle about 1/4 inch thick.
- Place the rolled puris on the prepared baking tray. Brush the tops lightly with olive oil.
- Bake in the preheated oven for 15-20 minutes, or until the puris are crisp and golden brown, flipping them halfway through.
- Remove from the oven and let cool slightly before serving.
