Ingredients

  • Basmati rice - 1 cup
  • Fresh spinach - 150 grams
  • Onion - 1 medium, thinly sliced
  • Ginger - 1 inch piece, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Water - 2 cups
  • Oil or ghee - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a pan, heat the oil or ghee over medium heat. Add cumin seeds and let them splutter.
  3. Add the sliced onions and sauté until they turn golden brown.
  4. Stir in the grated ginger, minced garlic, and slit green chili. Sauté for another 1-2 minutes until fragrant.
  5. Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes. Stir in the turmeric powder, salt, and garam masala.
  6. Drain the soaked rice and add it to the spinach mixture. Gently stir to combine and coat the rice with the spices.
  7. Pour in 2 cups of water and bring it to a boil. Once boiling, reduce the heat to low and cover the pan with a lid.
  8. Cook for 15 minutes or until the rice is tender and all the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes.
  9. Fluff the rice with a fork, add lemon juice, and garnish with fresh coriander leaves before serving.
