Ingredients
- Basmati rice - 1 cup
- Fresh spinach - 150 grams
- Onion - 1 medium, thinly sliced
- Ginger - 1 inch piece, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Water - 2 cups
- Oil or ghee - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pan, heat the oil or ghee over medium heat. Add cumin seeds and let them splutter.
- Add the sliced onions and sauté until they turn golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili. Sauté for another 1-2 minutes until fragrant.
- Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes. Stir in the turmeric powder, salt, and garam masala.
- Drain the soaked rice and add it to the spinach mixture. Gently stir to combine and coat the rice with the spices.
- Pour in 2 cups of water and bring it to a boil. Once boiling, reduce the heat to low and cover the pan with a lid.
- Cook for 15 minutes or until the rice is tender and all the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork, add lemon juice, and garnish with fresh coriander leaves before serving.
