Ingredients

  • Spinach - 200 grams
  • Almond flour - 100 grams
  • Psyllium husk - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 100-150 ml (as needed)
  • Ghee or oil - for cooking

Steps

  1. Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes until wilted. Drain and cool.
  2. Once cooled, blend the spinach into a smooth paste using a little water if necessary.
  3. In a mixing bowl, combine almond flour, psyllium husk, cumin powder, garam masala, and salt.
  4. Add the spinach paste to the dry ingredients and mix well. Gradually add water until a dough forms.
  5. Knead the dough for a few minutes until it is smooth and pliable. Cover with a damp cloth and let it rest for 10 minutes.
  6. Divide the dough into equal portions and roll each portion into a ball.
  7. Dust a clean surface with almond flour and roll out each ball into a flat circle, about 6-7 inches in diameter.
  8. Heat a skillet over medium heat and add a little ghee or oil.
  9. Cook each paratha for 2-3 minutes on each side until golden brown, adding more ghee or oil as needed.
  10. Serve hot with yogurt or your favorite low-carb chutney.
