- Spinach - 200 grams
- Almond flour - 100 grams
- Psyllium husk - 2 tablespoons
- Cumin powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Water - 100-150 ml (as needed)
- Ghee or oil - for cooking
Steps
- Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes until wilted. Drain and cool.
- Once cooled, blend the spinach into a smooth paste using a little water if necessary.
- In a mixing bowl, combine almond flour, psyllium husk, cumin powder, garam masala, and salt.
- Add the spinach paste to the dry ingredients and mix well. Gradually add water until a dough forms.
- Knead the dough for a few minutes until it is smooth and pliable. Cover with a damp cloth and let it rest for 10 minutes.
- Divide the dough into equal portions and roll each portion into a ball.
- Dust a clean surface with almond flour and roll out each ball into a flat circle, about 6-7 inches in diameter.
- Heat a skillet over medium heat and add a little ghee or oil.
- Cook each paratha for 2-3 minutes on each side until golden brown, adding more ghee or oil as needed.
- Serve hot with yogurt or your favorite low-carb chutney.
