Ingredients

  • Fresh spinach - 200 grams
  • Paneer - 150 grams
  • Whole wheat tortillas - 2
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, finely chopped (optional)
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Greek yogurt - for serving (optional)

Steps

  1. Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes until wilted, then drain and cool.
  2. In a pan, heat olive oil over medium heat and add cumin seeds. Once they crackle, add chopped onions, garlic, ginger, and green chili. Sauté until the onions are translucent.
  3. Add the blanched spinach to the pan and cook for 3-4 minutes, stirring well. Add turmeric powder, garam masala, salt, and black pepper. Mix well and cook for another 2 minutes.
  4. Crumble the paneer and add it to the spinach mixture. Stir gently to combine and cook for 2-3 minutes until the paneer is heated through.
  5. Remove from heat and stir in lemon juice for added flavor.
  6. Warm the whole wheat tortillas on a skillet for a few seconds on each side.
  7. Place a portion of the palak paneer mixture on each tortilla, fold it over, and roll it into a wrap.
  8. Serve hot with a side of Greek yogurt if desired.
