Ingredients

  • Zucchini - 2 medium, spiralized
  • Paneer - 100 grams, cubed
  • Spinach - 200 grams, fresh
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, finely chopped (optional)
  • Cumin seeds - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Heavy cream - 50 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a pan over medium heat and add cumin seeds. Once they splutter, add the minced garlic, grated ginger, and green chili; sauté for 1-2 minutes until fragrant.
  2. Add the fresh spinach to the pan and cook until wilted, about 3-4 minutes. Stir occasionally to ensure even cooking.
  3. Season the spinach with salt, black pepper, and garam masala. Remove from heat and let it cool slightly.
  4. Transfer the spinach mixture to a blender, add heavy cream, and blend until smooth to create a creamy spinach sauce.
  5. In the same pan, add the cubed paneer and cook for 3-4 minutes until golden brown on all sides. Remove the paneer and set aside.
  6. In the same pan, add the spiralized zucchini and sauté for 2-3 minutes until slightly softened.
  7. Add the creamy spinach sauce to the zucchini and mix well. Add the cooked paneer and stir to combine, cooking for an additional 2-3 minutes until everything is heated through.
  8. Serve hot, garnished with extra paneer cubes or a sprinkle of garam masala if desired.
